HALAL COMPLIANCE IN A SLAUGHTER HOUSE & MEAT PROCESSING
What is Halal?
Halal simply means permitted or lawful. Halal foods means any foods that are allowed to be eaten according to Islamic Sharia law.
This means that for any food to be considered Halal it must comply with the religious ritual and observance of Sharia law.
Foods not permitted include:
- meat or any products from a forbidden animal, including pigs and any carnivorous animals or birds of prey
- meat or any products of an animal which has not been slaughtered in the correct manner
Requirements for a Halal Slaughter house;
- Slaughter only animals that are considered Halal. The animals have to be alive and healthy.
- The slaughter must be carried out by a Muslim who is trained. The name of Allah must be invoked upon slaughter of each Halal animal.
- Animals must be slaughtered facing mecca and have the throat cut while still alive.
- The animal’s throat must be cut by a sharp knife severing the carotid artery, jugular vein and windpipe in a single swipe.
- The animal must bleed completely
- No contamination from non Halal animals
Choice Meats compliance with Halal requirements;
- Only animals considered Halal are slaughtered; this include Cattle, Sheep, lamb and goats.
- The facility and the slaughter area is designed to comply with the ritual slaughter.
- The slaughter is done by Muslim Slaughter men who are regularly trained;
- All processing ingredients sourced from Halal certified companies.
- All the products are transported through a well-managed cold chain, which ensures no contamination.
- All the Halal and hygiene requirements are met. This includes certification for ISO 22:000:2005
- Annual audits are conducted by Supreme Council of Kenyan Muslims (SUPKEM) and Kenya Bureau of Halal Certification (KBHC) and the factory is certified as Halal compliant.
- The certifying bodies also carry supervision on our day to day operations.
